To date, the most unusual version of Huevos Rancheros I'd seen... This was more like nachos. It was good, but probably shouldn't even qualify as "Ranchero Eggs." And I don't think cheddar cheese is authentic. The cheese and chips made it taste heavier and more unhealthy than usual.

Authentic huevos rancheros in Mazatlan
I love huevos rancheros for brunch, so I tried some authentic versions in Mexico:

While these were both good, I prefer the "Tex-Mex" non-authentic versions with salsa.

It all started in Mazatlan
This is
how the tortilla soup was made at our hotel - in 3 steps at the table.
It was delicious. I don't remember the names of the restaurants here, so

This one was fancy looking, with the chips sticking out, but way too salty.
